{ Watermelon Mint Granita }

 

I know you were wondering what to do with the other half of the watermelon from your Watermelon, Basil & Feta Salad! Let’s make watermelon mint goodness! Here is a recipe for watermelon mint granita. 

{ ingredients }

  •  1/2 of a medium seedless watermelon
  • Handful of fresh mint, finely chopped
  • Juice from 2 limes
  • 1 Tbs. agave (more or less to preference)

{directions }

  1. Cut watermelon into pieces and puree in a food processor. Strain puree through a sieve and strain out solids, forcing liquid out with a wooden spoon
  2. Combine the watermelon puree, lime juice, mint and agave in a 9 by 13-inch metal pan. 
  3. Place mixture in the freezer, scraping with a fork every 20 to 30 minutes for 2-3 hours, or until the granita resembles coarse crystals.
  4. Keep in freezer until ready to serve or serve immediately.
  5. Enjoy! Yum!

Makes 6 servings. 51 calories per serving.
