{ Coconut Cauliflower Rice }


My husband has a new obsession with cauliflower rice. His secret is roasting the cauliflower, instead of just softening in the microwave. Roasted cauliflower has a delicious nutty flavor and smell that fills our whole house! Cauliflower rice is filling AND very low in calories. Here is his recipe for cilantro lime cauliflower rice.

{ ingredients }

  • 1 head of cauliflower, cut into florets
  • 1/4 red onion, diced
  • Handful of fresh cilantro
  • 3 Tbs. coconut milk, unsweetened
  • 2 Tbs. EVOO
  • Salt & pepper to taste

{ directions }

  1. First preheat oven to 350ºF.
  2. Toss cauliflower with EVOO, salt and pepper and pour onto baking sheet.
  3. Place in oven and roast for 20-25 minutes, until tender and slightly browned in areas. Take out of oven and let cool slighly.
  4. Using a food processor, add cauliflower, onion, cilantro and coconut milk. Pulse until well blended. Season with additional salt and pepper to taste.
  5. Serve alone as a side or with your favorite grilled vegetables or curry!
  6. Enjoy! Yum!

Makes 4 servings. Only about 40 calories per cup!
