{ Roasted Broccoli & Tomatoes with Herb Vinaigrette & Feta }

 

I have a love affair with roasted vegetables, as you all have seen here, here, here and here! Here is a recipes for roasted broccoli and tomatoes in a caper herb vinaigrette. So good!

{ ingredients }

  • 1 head of broccoli, cut into florets
  • 1 cup grape tomatoes
  • 4 Tbs. EVOO
  • Salt & pepper to taste
  • Feta cheese (for topping)

DRESSING

  • 1/4 cup fresh herbs chopped (I used cilantro, basil, oregano and thyme)
  • Juice from 1 lemon + 1/2 tsp. zest
  • 3 Tbs. capers
  • 4 tsp. white wine vinaigrette
  • 1/4 cup EVOO
  • Salt and pepper to taste

{ directions }

  1. First preheat oven to 450ºF.
  2. Toss broccoli and tomoatoes with EVOO, salt and pepper and pour onto baking sheet.
  3. Place in oven and roast for 10-15 minutes, until broccoli are tender and slightly browned in areas.
  4. While broccoli is roasted, make your vinaigrette. Mix all ingredients except oil and then add the oil slowly.
  5. When broccoli and tomatoes are done, tossed with dressing and serve topped with feta.
  6. Enjoy! Yum!

Makes 4 servings.
