Apply & Pear Salad

{ Winter Salad }

All credit goes to my mom on this one. She sent me this recipe hand written on a piece of scrap paper. I could barely read it and was not too excited about it. I made it once and it is now one of my favorite to salads!

{ ingredients }

DRESSING:

  • 1/2 c. sugar (or agave)
  • 1/3 c. lemon juice (or any citrus juice)
  • 2 tsp. white wine vinegar
  • 1 tbs. dijon mustard
  • 1/2 tsp. salt
  • dash of pepper
  • 1 tbs. poppy seeds
  • 2/3 c. EVOO 
SALAD:
  • 1 lg. romaine 
  • 1 c. cashews
  • 4 oz. Swiss cheese (I leave this out)
  • 1/2 c. dried cherries or cranberries
  • 1 apple cubed
  • 1 pear cubed

{directions }

  1. Mix sugar, lemon juice, vinegar, dijon, salt, pepper and poppy seeds well.
  2. Add EVOO slowly.
  3. Mix salad ingredients in large bowl.
  4. Toss with dressing.
  5. Enjoy! Yum!

Makes 6 servings.
