{ Oatmeal Scotchies }

 

I was craving butterscotch, but was out of eggs. This was an experiment, but it turned out great. I brought them to two different events last weekend and they were a hit. Here is a recipe for butterscotch oatmeal cookies without eggs!

{ ingredients }

  • 1 cup butter (or butter substitute), softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup white sugar
  • 1 tspn. pure vanilla extract
  • 1 1/2 cups all-purpose flour (I swapped for 1/2 whole wheat)
  • 1/2 tspn. salt
  • 1 tspn. baking soda
  • 1/4 cup boiling water
  • 1 1/2 cups quick-cooking oats
  • 1/2 cup wheat germ
  • 1 1/2 cups semi-sweet butterscotch chips

{ directions }

  1. Preheat oven to 350 degrees.
  2. Beat butter or margarine, sugars and vanilla until light and fluffy.
  3. Add flour and salt, mix well.
  4. Dissolve baking soda in boiling water and add to mixture. Stir in rolled oats, butterscotch chips.
  5. Drop by teaspoonful onto ungreased cookie sheet. Bake for for 10-12 minutes until bottom of cookies is slightly brown. Do not overcook (the secret to the cookie is slightly undercooking.
  6. Remove from the cookie sheet and move to a cooling rack to let cool completely.
  7. Enjoy! Yum!

Makes about 36 cookies, but beware, these disappear quickly! Adapted from this recipe.
