{ Heirloom Tomato Salad }


I LOVE TOMATOES! All shapes, sizes and colors! I’ll eat them plain and right off the vine, but for a dinner party or quick snack, I love a handful of tomatoes with fresh lemon and garden herbs. Here’s a recipe to make a simple tomato salad.

{ ingredients }

  •  2-3 cups of tomatoes (this can be any combination of your favorite tomatoes – I usually like a mixture of heirloom, cherry, sungold and new girl and/or roma – play with shapes, sizes and colors!)
  • Juice from 1 lemon
  • 1/2 tsp. lemon zest
  • 1 Tbs. white wine vinegar
  • 1 Tbs. EVOO
  • 1/4 cup of herbs (your choice – I used sweet basil, cilantro and thyme), chopped
  • Sea salt & ground pepper

{directions }

  1. Slice tomatoes and combine in a bowl.
  2. Combine lemon juice, oil, vinegar, salt and pepper, and whisk together in small bowl.
  3. Pour dressing over tomatoes and add herbs. Stir until combined.
  4. Let marinate for 15-30 minutes.
  5. Serve and enjoy! Yum!

Makes 4 servings.
