{ Vanilla Chia Seed Pudding }

 

I’ve used chia seeds in smoothies, on top of yogurt and hidden in veggie burgers, but this is my first venture into chia seed pudding! At first, I felt like I was eating alien eggs, but when I mixed in berries and some lemon zest, I was sold! AND, you can’t argue with the fiber and other nutrients chia seeds offer. This may become a new breakfast go to! Here’s a chia seed pudding recipe for you to try.

{ingredients}

  • 1/2 cup  raw chia seeds
  • 2 cups unsweetened coconut milk (You can also use almost, soy, or regular milk) 
  • 2 tsp. pure vanilla extract
  • 3 Tbs. maple syrup
  • 1 tsp. lemon zest
  • Pinch of kosher salt

{direction}

  1. Mix all ingredients in a bowl. Whisk together until combined. 
  2. Cover and store in the fridge overnight (I tried to stir a few times).
  3. Serve with your favorite fruits or nuts! I served with strawberries, raspberries and a bit more lemon zest!
  4. Enjoy! Yum!

Make 6 servings (107 Caloriea per Serving).

NOTE: For a thicker pudding, replace 1 cup of coconut milk with 1 cup non-fat Greek yogurt or non-dairy yogurt of your choice.
