{ Melon Salad with Mint & Lime }

 

This is my favorite way to eat melon. Fresh, simple and delicious. This is a great side salad for a cook-out or brunch.

{ ingredients }

  •  Mini seedless watermelon
  • Cantaloupe
  • Honeydew melon
  • Juice from 1 lime
  • 1/4 cup of fresh mint, chopped
  • Dash of sea salt

{directions }

  1. Using a melon baller, scoop out balls from each melon. I have a melon baller with two different sizes, and prefer to use the smaller size for the watermelon and cantaloupe, and the larger for the honeydew.
  2. Combine melon in a bowl and stir in lime juice, mint and salt.
  3. Cover and store in the fridge for about an hour (or more) to chill and marinate.
  4. Serve and enjoy! Yum!
