{ Chipotle Sweet Potato Chips }

Is there anything better than sweet and spicy? I love this combination of sweet potato chips with a hint of spice. Enjoy as a snack or as a side with your favorite (veggie) burger!

{ ingredients }

  • 1 large sweet potato
  • Vegetable Oil
  • Sea salt & cracked pepper
  • Chipotle chili powder

  • Mandeline
  • Large stock pot
  • Slotted spoon or tongs

{ directions }

  1. Using your mandeline, slice sweet potato with the thinnest setting and try to keep each chip uniform. (if you don’t have a mandoline, just try to keep things as thin and even as possible)
  2. Fill bottom of large saucepan with vegetable oil (about 2 inches) and bring to a low boil. Add potato slices and fry in batches, stirring and flipping frequently for 2 – 3 minutes.
  3. Remove from oil with slotted spoon or tongs and place on paper towels to drain. Sprinkle salt, pepper and desired amount of chili powder.
  4. Let cool for a few minutes and serve.
  5. Enjoy! Yum!

NOTE: If you take the chips out too early and the centers are soft at all, you can pop them in the oven at 350 for just a few minutes.

{ Additional Seasonings }

  • Cinnamon
  • Garlic powder
  • Celery salt
  • Cumin
  • Salt & vinegar
  • Lemon & ginger

Makes enough to share, but you may not want to. Makes 4-6 servings. (115 Calories per Serving)

Adapted from this recipe.
