{ Roasted Golden Beets }

 

More roasted veggies! Golden beets are one of my favorites to roast and make chips with! They are slightly sweeter than classic red beets.

{ ingredients }

  • 4 golden beets, peeled and cut into 3/4 inch cubes (you can use red beets or a mix of red and golden)
  • 2 Tbs. EVOO
  • 2 Tbs. orange juice
  • 2 tsp. fresh (or dried) thyme
  • Salt & pepper to taste

{ directions }

  1. First preheat oven to 425ºF.
  2. Toss beets with EVOO, juice, thyme, salt and pepper and pour onto baking sheet.
  3. Place in oven and roast for 20 minutes, until beets are tender.
  4. Enjoy! Yum!
