{ Cauliflower Crust Pizza }

I was hesitant about this, but I am now a believer. This cauliflower pizza is worth a try!

{ ingredients }


  • 1 small head of cauliflower, florets removed
  • ¼ cup grated Parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • ½ teaspoon fresh (or dried) oregano, finely chopped
  • ½ teaspoon fresh (or dried) basil, finely chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon salt
  • 1 egg

TOPPINGS: (find your favorites, here are some of mine)

  • 3 tsp EVOO
  • Pizza sauce of your choice (I used homemade pesto)
  • ½ cup shredded mozzarella cheese
  • 1 ounce goat cheese, crumbled
  • ¼ small red onion, sliced
  • 6 cherry tomatoes (red and yellow), quartered
  • Kalamata olives, halved
  • Fresh ground salt & pepper

 { directions }

  1. Place a pizza stone or baking sheet in your oven, and pre-heat the oven to 450 degrees. On a pizza peel or cutting board, place a piece of parchment sprayed with non-stick cooking oil.
  2. Remove the florets from your head of cauliflower.
  3. Place the florets in a food processor or blender and pulse until the cauliflower has the texture of sand. It will be about 2½-3 cups.
  4. Transfer the cauliflower to a microwave safe bowl and microwave, covered, for 4 minutes. Let your cauliflower cool completely.
  5. Place the cauliflower in a towel and wring it tightly to remove all excess moisture. (this is an important step!)
  6. Place the cauliflower in a mixing bowl and add the cheeses, spices, and the egg. Mix until well combined.
  7. Form the dough into a ball and place it on the parchment-lined pizza peel or cutting board and roll or press into a circle. You will want it about 1/6 inch thick.
  8. Bake crust for 8-10 minutes until the dough is golden brown. Carefully remove it from the oven.
  9. Spread the sauce over the pizza dough and sprinkle with an even layer of mozzarella. Top with your preferred vegetables and crumbled goat cheese.
  10. Bake for another 5-7 minutes until the cheese is melted and bubbling slightly. Remove your pizza from the oven and let cool for 2-3 minutes before slicing to make sure that the crust stays intact.
  11. Enjoy! Yum!

Makes about 4 servings. This was also great leftover for lunch the next day! Crust based on this recipe.
