{ Crispy Sriracha Curry Chickpeas }


Everybody’s doing it! I’ve seen too many posts about roasted chickpeas, I had to try my own! These are little nuggets of deliciousness!

ingredients }

  • 2 cans (15oz) chickpeas, drained, rinsed and patted dry
  • 1  Tbs. coconut oil
  • 1 heaping tsp. sriracha
  • 1 heaping tsp. curry powder (I used 1/2 tsp. each of my two favorite curry powders)
  • 1 tsp. fresh cilantro, finely diced
  • Fresh lime juice from 1/4 of one lime
  • Dash of cumin
  • Sea salt to taste

{ directions }

  1. Preheat an oven to 400 degrees.
  2. Mixed all ingredients in a medium bowl until combined well.
  3. Place mixture on baking sheet in a single layer and bake for 40-45 minutes until roasted and crispy.
  4. Let cool for 15 minutes before eating
  5. Enjoy! Yum!

{ Additional Seasonings }

  • Soy sauce & sesame seeds
  • Garlic powder
  • Celery salt
  • Smokey chipotle
  • Cumin & cayenne
  • Lime & cilantro
  • Lemon & ginger

Makes enough to share. Watch them carefully the last 5-10 minutes to make sure they don’t burn. I burned my first batch…practice makes perfect.
