{ Farfalle Salad with Smoked Mozzarella }

 

Everyone who knows me knows that this is my favorite and go to pasta salad. I’ve shared this recipe with few and made it for many, so here it is. Perfect side for a cook out or potluck!

{ ingredients }

  • 12 oz. dried farfalle (bowties)
  • 1 Tbs. salt
  • 5 Tbs. olive oil (or grapeseed oil)
  • 3 Tbs. balsamic vinegar (more if you prefer)
  • 1 1/4 cups (5 oz.) coarsely shredded mozzarella (or smoked Gouda)
  • 20 cherry tomatoes, halved (I love to use half red cherry or grape and half sweet yellow)
  • 1 cup packed fresh basil leaves
  • Salt  & pepper

{ directions }

  1. Boil water and make pasta as directed. Add salt to the water.
  2. Drain the pasta and immediately toss with 1 Tbs. EVOO. Covet and cool completely in the refrigerator, 1-24 hours.
  3. In a large bowl, whisk together remaining EVOO and vinegarar and salt and pepper. Add the pasta, cheese, tomatoes and basil. Toss to mix well.
  4. Serve at room temperature.Sauté garlic in EVOO in a wok or large sauté pan to soften.
  5. Enjoy! Yum!

Makes about 6 servings. I usually double this for parties!
