{ Brussel Sprouts & Apples }

 

I’ve said it before and I’ll say it again, I LOVE BRUSSEL SPROUTS! They are especially fantastic when mixed with apples!

{ ingredients }

  • 1 pound brussel sprouts, cleaned and halved
  • 1 medium red or white onion, diced
  • 1 apple, diced (you can use any kind but I prefer Gala)
  • 2 Tbs. Coconut oil
  • 1 tsp. pink Himalayan salt
  • dash fresh ground black pepper

{ directions }

  1. Add onion and 1 Tbs. of coconut oil in large pan. Sauté for 5 minutes to soften.
  2. Stir in the sprouts, apple and remaining coconut oil and sauté for about 20 minutes to make sure the sprouts just start to brown.
  3. Before serving, add salt and pepper to taste.
  4. Enjoy! Yum!

{ Additional Add-Ins }

  • Toasted pine nuts
  • Toasted walnuts

Makes about 6 servings. I’ve made this for holidays, potlucks and just dinner at home. Always one of my favorites! Shown here with cumin roasted sweet potatoes and grilled asparagus.
