{ Vegan Hot Chocolate }

Yup…it’s still cold out, and that means you may need a cup of hot chocolate! My favorite is a vegan recipe using coconut milk.

{ ingredients }

  • 4 cups unsweetened coconut milk (you could also use almond milk or 1/2 and 1/2 coconut and almond)
  • 4 heaping Tbsp cocoa powder (maybe 5 or more for more intense chocolate flavor)
  • 2-3 Tbsp agave, depending on your taste (you can also use sugar or honey)
  • 1/2 tsp cinnamon (I recommend Vietnamese as it’s sweeter)
  • scant 1/4 tsp each nutmeg
  • 1 tsp pure vanilla extract

{ directions }

  1. In a small sauce pan, combine all ingredients. Whisk to make sure cocoa powder is dissolved and combined.
  2. Bring to a low simmer for about 5 minutes.
  3. Serve in mugs and top with cocoa nibs, coconut whipped cream or drink plain. Add a scant of cayenne for more of a Mexican Hot Chocolate kick!
  4. Enjoy! Yum!

Makes enough for you and a friend.
