{ Cumin, Turmeric & Ginger Cauliflower Steaks }


If you have not tried cauliflower roasted, you are missing out. Cauliflower gets a nuttiness (and deliciousness) when grilled or roasted. Add some aggressive herbs and a little lime juice, you’re set for a dinner party or a date night meal at home.

{ ingredients }

  • 1 large head cauliflower
  • EVOO
  • 1 tsp. fresh ginger, grated
  • 1 1/2 tbs ground cumin
  • 1 tbs. ground turmeric
  • Small handful of fresh cilantro, chopped
  • 1/2 of a lime, juiced
  • Salt and pepper

{ directions }

  1. Warm up grill and preheat the oven to 375°F.
  2. Remove the leaves and trim the stem end of the cauliflower, leaving the core intact. Using a large knife, cut the cauliflower from top to base into three 3/4-inch-thick “steaks.”
  3. Combine cumin, turmeric and ginger in a small bowl. Once combined, stir in lime juice to make your spice paste. Place steaks in a bowl and drizzle with EVOO. Salt and pepper both sides, and drizzle spice mix. Make sure both sides are covered.
  4. Place steaks on the grill to char. This should only take a few minutes. (You can also brown  in a large skillet over medium-high heat). Gently transfer the steaks to a baking sheet once you can see grill marks.
  5. Roast in the oven until tender, about 18 minutes. Garnish with cilantro (and other half of lime juiced if you would like) and serve.
  6. Enjoy! Yum!

Makes 4 servings. I served these over a simple garlic couscous (I used pearl couscous) and topped with toasted pine nuts, more fresh lime juice and cilantro leaves. Also served with mustard baby brussel sprouts.
