{ Cabbage, Kale & Fennel Slaw }

 

This is a cabbage, kale and fennel slaw in a grapefruit ginger dressing. It was an experiment, but a yummy one! It is definitely worth sharing. I’ll be making it again!

{ ingredients }

DRESSING:

  • 2 tbs. sugar
  • 1/3 c. Grapefruit juice (I used white grapefruit)
  • 3 tbs. Apple cider vinegar
  • Fresh ginger, 1 inch of root minced
  • 1/2 tsp. salt
  • dash of pepper
  • 2 tbs. toasted sesame seeds
  • 1/3 c. EVOO

SLAW:

  • 1/2 head of red cabbage, chopped
  • 1 fennel bulb, chopped
  • Handful of kale (about 4 leaves), stems removed and finely chopped
  • 1/4 red onion, diced

{directions }

  1. Mix sugar, juice, vinegar, ginger, salt, pepper and sesame seeds well.
  2. Add EVOO slowly.
  3. Mix slaw ingredients in large bowl.
  4. Toss with dressing.
  5. Enjoy! Yum!

Makes 6 servings. Make and serve or make the day ahead and refrigerate until serving.
