{ Red Curry Noodles & Veggies }

I’m obsessed with curry. This is a quick and easy red curry noodle recipe I dare you not to love!

{ ingredients }

  • Brown Rice Thai noodles (I used the kind that came in little packs in the box and I used 2 packs)
  • 4 tbs. Curry paste (any brand) – or more to taste
  • 1 can Coconut milk
  • 2 tbs. brown sugar
  • ½ cup Veg. Broth
  • ½ red onion – diced
  • 1 head of broccoli roughly – chopped
  • 1 handful of carrots – chopped
  • 1 inch fresh ginger – grated
  • 3 green onions – chopped
  • Fresh cilantro
  • Chopped roasted peanuts
  • Extra spices to taste: Hot Madras Curry Powder, Coriander, Turmeric

 { directions }

  1. Combine coconut milk, brown sugar and curry powder in a large pan or wok until starting to boil and turn to simmer
  2. Make the noodles as directed (boil water, stir in noodles and remove from heat for 5 minutes)
  3. Stir in grated ginger and additional spices to taste (I did a few shakes of each of the extra spices AND I added a bit more curry paste) – taste and adjust as needed
  4. Add in chopped onion, broccoli and carrots and simmer until veggies start to cook
  5. Add in broth if mixture starts to look too thick
  6. Scoop noodles from pot into wok and let mixture simmer a few minutes for the noodles to soak up the sauce
  7. Serve topped with green onions, peanuts and cilantro.
  8. Enjoy! Yum!
