{ Peanut Citrus Noodles & Vegetables }

 

I love peanut sauce! Do you? Here’s my favorite recipe for a peanut sauce with the perfect balance of nuttiness, spice and citrus.

{ ingredients }

• 1lb Package of Soba Noodles (you can also use rice noodles)
• 2 cups shredded carrots (find in the salad area or chop yourself)
• 2 cups shredded red cabbage (find in the salad area or chop yourself)
• 2 cups chopped broccoli
• 1 cup sliced radishes (I used a mandolin to slice these)
• 3-4 green onions, chopped

SAUCE
• 1 1/2 cups creamy peanut butter
• 1/3 cup soy sauce
• 3 tablespoons chili garlic paste
• 3 tablespoons Sriracha
• 2 garlic cloves, minced
• 3 tablespoons water
• Fresh lime juice from 3 limes

TOPPINGS
• Chopped green onions
• Toasted sesame seeds
• Fresh cilantro

{ directions }

1. Follow directions to make noodles.
2. While noodles cook, mix all SAUCE ingredients together until smooth. Add additional lime or hot sauce to taste. Adjust to personal preference.
3. Prepare chopped vegetables.
4. Once noodles are cooked, drain and rinse with cold water.
5. Add noodles and vegetables in a large bowls. Once mixed, stir in peanut-citrus sauce.
6. Top with green onions, cilantro and sesame seeds for serving. Drizzle with Sriracha for an extra kick!
7. Enjoy! Yum!

Makes 6 servings.

NOTE: Make sauce to taste. Try out options using almond butter or cashew butter.
