{ Pita Pizza }

My husband loves pizza. We have tried all kinds of pizza crusts (fresh, frozen, from the farmer’s market, homemade, etc.) and always seem to come back to pita pizzas. We have found that whole wheat pita’s are the perfect size and thickness to support any sauce, cheese and toppings we think of for our personal pizzas. They cook quick and taste great. I hope you agree! Here is one of my favorite combinations.

{ ingredients }
  • Whole wheat pita
  • EVOO
  • Fresh mozzarella (or your preferred cheese)
  • Shredded smoked gouda
  • Fresh basil leaves
  • Fresh rosemary
  • Garlic
  • Heirloom tomatoes, halved
  • Red onion, chopped
  • Sweet potato, chopped to small pieces and roasted slightly
  • Balsamic vinegar
  • Salt and pepper to taste
{ directions }
  1. Preheat oven to 400.
  2. Rub garlic on one side of the pita and drizzle with EVOO. Make sure the EVOO is spread out and covered the crust.
  3. Top with desired cheese and toppings. For this one, I used fresh mozzarella and a tiny bit of shredded smoke gouda for cheese and topped with halved cherry tomatoes, sweet potato (I roasted small pieces before adding them to the pizza), red onion, fresh basil leaves and rosemary.
  4. Cook for six to eight minutes, until cheese is melted.
  5. I finished with a drizzle of balsamic vinegar and salt and pepper.
{ TOPPINGS }
A couple more of my favorite toppings include:
  • Smoked gouda with portebello mushrooms and red onion
  • Caprese – fresh mozzarella, tomatoes and basil
  • Pesto, Asiago, Parmesan and tomatoes
  • Fresh tomato sauce with cheese and fresh jalapenos —

{ OPTIONS & TIPS }

  • You can also cook the pizzas on the grill on medium heat until the cheese melts
  • Top with YOUR favorite cheese or vegetables
  • Have a pita pizza party! Give everyone a pita and put out bowls of different toppings! Fun for kids and adults!
