{ Peanut Butter Energy Balls }

Instead of a calorie packed dessert, I make these to have a sweet bite sometimes. They are great as a casual dessert or for a morning snack on the go!

{ ingredients }

  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup rolled oats
  • 3 tbs. honey or agave
  • 2 tbs. ground flaxseed or wheatgerm
  • 2 tbs. flaked coconut
  • Cocoa powders, wheatgerm and powdered sugar for coating

{ directions }

  1. Combine all ingredients in a bowl or mixer and stir until combined. I did this in my stand mixer and it took about two minutes.
  2. Form rounded tablespoons of the mixture into ballsl
  3. Combine what you’d like to coat the balls with in a bowl. I used cocoa powder, powdered sugar and wheatgerm. Roll each until completely covered.
  4. Enjoy! Yum!


  • You could also roll these in peanuts, cinnamon sugar, etc. Be creative.
  • You can also add carob chips or semi-sweet chocolate chips to the mixture.

Makes about 12 balls.
