{ Beet Chips }

Beet chips are one of my favorite snacks. They are great with a veggie burger or sandwich, with some hummus for an appetizer or alone for a snack.

{ ingredients }

  • 3-4 medium beets (red and golden), peeled and sliced thinly about 1/16 – 1/8 inch (I use a mandoline)
  • 1 tbs. EVOO
  • Sea salt and cracked pepper to taste

{ directions }

  1. Preheat oven to 350º F.
  2. Toss beets slices with oil in a medium sized bowl until they are all well coated and lay them flat in a single-layer on a rimmed baking sheet (bake in multiple batches, if needed).
  3. Bake for 20-30 minutes, until chips are crispy. Peek in after 15 minutes or so to make sure none are burnings. I sometimes turn mine over half way through.
  4. Sprinkle with salt and pepper when you take them out.
  5. Transfer to a paper towel to drain any extra oil then move a wire rack and they will crisp up a bit more as they cool.
  6. Enjoy! Yum!

{ Additional Seasonings }

  • Rosemary and garlic salt
  • Celery salt
  • Cumin
  • Curry powder

Makes enough to share, but you may not want to.
